Method
Margarita:
- Add lime juice and agave syrup to Boston glass
- Make sure all agave is dissolved in the lime juice, then add tequila
- Shake hard with ice then fine strain into a chilled cactus glass
- Add salt foam garnish (see below)
Salt Foam:
- Mix all ingredients and add to a creamer
- Add 1 ice cube to the creamer, seal, then shake the creamer until you can't hear the ice cube any longer
- Charge with 2 gas bulbs
- Spray onto top of margarita
- Keep creamer chilled in fridge until next required
