This recipe for chargrilled asparagus, poached eggs & aged parmesan was developed by the head chef at Gordon Ramsay's maze Grill Mayfair restaurant.

Yield: Serves 2
INGREDIENTS:
- 1 bunch of Wye Valley asparagus
- 4 Burford brown eggs
- Aged parmesan
- Olive oil
- Salt and pepper
Directions:
- Poach the eggs
- Lightly oil the asparagus
- Grill asparagus until coloured on the outside
- Plate up with the poached eggs shaving parmesan to finish
