Ingredients
For the Tofu Eggs

450g firm tofu

30g spring onions

100g sun-dried tomato in oil

10g turmeric
Accompaniments
- Toasted Sourdough bread
- One Avocado
- 100g spinach
Cooking instructions
- Finely chop and lightly fry spring onions
- Add diced sun dried tomatoes and stir together
- Add turmeric and crumbled tofu. Cook for three to four minutes.
- Season with salt to taste
- Top sourdough toast with smashed avocado, wilted spinach, and tofu mixture
