Smashed Avocado and Poached Eggs on Toast

  1. Start with the avocado, cut each avocado in half and remove the stone.
  2. Place the flesh into a bowl.
  3. Add zest and juice.
  4. Add olive oil and chopped herbs.
  5. Smash with fork.
  6. Taste and season with salt and pepper.
  7. For the eggs, crack 2 eggs into a small bowl or cup.
  8. Fill a pan with water and bring to the boil.
  9. Add vinegar.
  10. Stir the water clockwise to create a whirlpool.
  11. Gently drop the eggs into the centre one at a time continuing the whirlpool.
  12. Simmer for 3-4 minutes. 
  13. Spoon the avocado on to toast and top with the egg. 
  14. Drizzle olive oil or sri racha to finish.
