Picanha Steak and Chimichurri
Ingredients
For chimichurri:
- 2 shallots — finely diced
- 1 bunch of chives — chopped fine
- 1 red chilli — deseeded and finely diced
- 1 green chilli — deseeded and finely diced
- 3 plum tomatoes — de seeded and diced
- 1 bunch of coriander — finely chopped
- Olive oil
- 1 lime juice
- Salt and pepper to taste
For picanha:
- 1 picanha cut from the butcher. Ask for a top sirloin cap.
- coarse sea salt
Cooking instructions
For chimichurri:
- Mix all vegetable ingredients together
- Add olive oil slowly just enough to bind the ingredients together
- Finish seasoning
For picanha:
- Season liberally the steak
- Grill on each side for 2-3 minutes
To serve:
- Spoon chimichurri over steak and serve
