Kale, chick pea and avocado salad, sesame vinaigrette
Ingredients
Vinaigrette:
- 50ml sherry vinaigrette
- 50ml sesame oil
- 100ml olive oil
- 1 1/2 tsp agave nectar
Salad:
- 1 small tin of chick pea
- 2 ripe avocado, peeled and diced
- 2 clementines or easy peel citrus, peeled and chopped
- 2 tbsp toasted sesame seeds
- 2 tbsp black sesame seeds
- 3 hand full of kale, shredded like chiffonade
- ½ sliced finely red onions
Cooking instructions
For the vinaigrette:
- Mix together vinegar plus salt, and mix until dissolved.
- Add both oils and mix until it binds together.
- Add agave and stir.
For the salad:
- Combine all remaining ingredients and split onto 2 plates.
- Pour the dressing over each salad, and check seasoning.
