Chilli and Garlic Prawns

Ingredients

For the chilli garlic sauce:

  1. 200g red chillies with seeds 
  2. 200g garlic cloves peeled 
  3. 100ml olive oil 
  4. 50ml lime juice 


To cook:

  1. 700g king prawns peeled and deveined
  2. 1 sprig of coriander, roughly chopped  
  3. 50ml olive oil
  4. 12 pieces of sourdough bread toasted 
  5. 3 lemons, cut in half 
  6. Sea salt 

Cooking instructions

To make the sauce:

  1. Blanch the chillies and the garlic in boiling salted water for 20 minutes 
  2. Drain and place the chilli and garlic in the blender with the lime juice and olive oil - blend until smooth 
  3. Season with salt and pepper 

To cook the prawns:

  1. Heat some olive oil in a frying pan until it is very hot
  2. Add the prawns to the pan and season with sea salt 
  3. Fry for 2-3 minutes, turning the prawns until they are evenly pink 
  4. Add the chilli sauce and bring to the boil, simmer for 2 minutes

To serve:

  1. Place in a serving bowl and sprinkle with chopped coriander 
  2. Serve with the toasted sourdough and half a lemon
