Chilli and Garlic Prawns
Ingredients
For the chilli garlic sauce:
- 200g red chillies with seeds
- 200g garlic cloves peeled
- 100ml olive oil
- 50ml lime juice
To cook:
- 700g king prawns peeled and deveined
- 1 sprig of coriander, roughly chopped
- 50ml olive oil
- 12 pieces of sourdough bread toasted
- 3 lemons, cut in half
- Sea salt
Cooking instructions
To make the sauce:
- Blanch the chillies and the garlic in boiling salted water for 20 minutes
- Drain and place the chilli and garlic in the blender with the lime juice and olive oil - blend until smooth
- Season with salt and pepper
To cook the prawns:
- Heat some olive oil in a frying pan until it is very hot
- Add the prawns to the pan and season with sea salt
- Fry for 2-3 minutes, turning the prawns until they are evenly pink
- Add the chilli sauce and bring to the boil, simmer for 2 minutes
To serve:
- Place in a serving bowl and sprinkle with chopped coriander
- Serve with the toasted sourdough and half a lemon
