Braised Red Cabbage
Ingredients
Serves 6
- 100g butter
- 1 small (about 600g) red cabbage, finely shredded
- 1 Bramley apple, peeled, cored and sliced
- 100g demerara sugar
- 100ml red wine vinegar
- 2 cinnamon sticks
- 2 star anise
- 2 cloves
- 1 lemon, zested and juiced
- Sea salt and freshly ground black pepper
Cooking instructions
- Preheat the oven to 160°C/Fan 140°C/Gas 3. Melt the butter in a casserole dish over a medium heat. Add the cabbage and apple and cook for 5-10 minutes or until just soft.
- Add the remaining ingredients, season and stir together for a few minutes.
- Cover with a wet, crumpled piece of baking paper and a lid and transfer to the preheated oven.
- Cook for 1½ hours, stirring every 30 minutes, until reduced and tender. Serve immediately or cool and keep in the fridge for up to 3 days. Reheat to serve, adding a splash of water if it seems dry.
Tips: Try adding orange zest and juice instead of the lemon for a more festive spin, or a glug of red wine along with the vinegar for extra flavour.
