Bircher Muesli
Ingredients
Serves 4
- 100g rolled oats
- 30g raisins
- 30g sunflower or pumpkin seeds, plus extra to serve
- 30g flaked almonds, plus extra to serve
- 20g chia seeds
- 500ml unsweetened almond milk
- 2 tbsp maple syrup or agave syrup
- Pinch of cinnamon
- 1 tsp vanilla extract
- 2 apples, grated
- 20g goji berries, plus extra to serve
Cooking instructions
- Mix all the ingredients together in a mixing bowl.
- Leave to soak for around 2-3 hours (or overnight) before serving.
- Divide between 4 bowls and top with a few extra seeds, flaked almonds and goji berries to serve, alternatively top with fresh seasonal fruits or an extra drizzle of maple syrup.
Tip: For a vegan breakfast, use a plant-based milk and syrup, otherwise non-vegans can use any dairy milk and honey instead.
